1 ½ oz Kill Devil Silver rum
3/4 oz mint simple syrup (see recipe below)
1 oz fresh lime juice (about one lime per drink)
4-6 fresh mint leaves
Combine all ingredients in a shaker tin with ice. Shake hard to get the mint to break up, then strain into a pint glass with ice and top off with soda water. You can also do this served straight up in a cosmo glass without soda water. Add seasonal fruit to this base recipe to kick it up a notch. We like watermelon or strawberries!
Mint Simple Syrup
Equal parts sugar and water
A good size handful of fresh mint (the more the mintier)
Combine ingredients into a pot and bring to a boil, stir at first until sugar is dissolved to prevent burning. Once it starts boiling remove pot from heat and let cool. Once cool, strain mint out and refrigerate. (It will keep in the fridge for a couple of months).
